Instant yeast is a dry yeast that comes in smaller granules than active dry yeast, absorbs liquid rapidly, and does not need to be hydrated or proofed before being mixed into flour.
It’s dry form makes it more resistable in higher temperaturs instead of fresh yeast.
It can be used in many baking applications,both industrial but also for home made use, including: bread, bread tost, arabic breads, croissant, brioche, baquette etc.
